Strawberry Muesli Overnight Oats

½ cup muesli

¼ cup Greek yogurt

2-4T coconut milk

¼ -1/2 c sliced strawberries

1 tsp maple syrup

I love the texture of muesli and Trader Joe’s just happens to carry one that has a great blend of seeds, minimal dried fruit and pieces of dried coconut. It’s the perfect amount of sweet.

Blueberry Protein Over Night Oats

½ cup rolled oats

½ scoop vanilla protein powder

¼ c Greek yogurt

1/3 c almond milk

¼ cup blueberries

Great as a protein packed breakfast or snack.

Chocolate Almond Butter Steel Cut Overnight Oats

1 cup steel cut oats

2 tsp chia seeds

2 tsp flax meal

1 T cacao powder

2 T almond butter

1 T maple syrup

1 cup almond milk

Optional cacao nibs sprinkled on top

This is the heartiest of the three oats recipes and more calorically dense. It also holds very well for up to 3 days. I cut this in half and use it to power through a Spartan Sprint and my kiddo loves it portioned out for her school snack.

It’s fun playing around with ingredients – test out different fruits, nut butters and milk and if you come up with a great creation be sure to let me know!
